The Best Gluten Free Brownie Recipe

Brownies, the perfect chocolatey comfort food. This was one of the first recipes I created because, everyone needs a go to gluten free brownie recipe!

What you will need for this recipe:

  • 1/2 cup + 2 tbsp Josie’s Best Gluten Free Muffin and More mix
  • 1/2 cup butter (room temperature)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup granulated white sugar
  • 1/2 cup packed brown sugar
  • 3 large eggs + 1 egg yolk
  • 1 tsp vanilla extract
  • 3 tbsp cocoa powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)
  • Parchment
  • Baking dish

When creating this recipe I was going for intense chocolate taste with common ingredients. Nothing I needed to make a special trip to the store for because you never know when you might NEED brownies! I also wanted fudge-y brownies with the perfect slightly crispy, crackly crust.

I went through many variations before coming to this recipe (my poor family having to taste test so many brownies). It’s simple and reliable, and a staple in our household. We used to have this recipe on the back of the Muffin and More bag. We removed it in favor of a muffin recipe (which we thought made more sense) but, we had a bunch of people wondering where their favorite brownies recipe had gone! Well, you found it !

These brownies are super fudgy, chocolatey, and we’ve heard “I can’t believe how good these taste!” every time we have used them as samples at demo’s or food shows. You could buy a brownie mix that you can just dump in a bowl but, this homemade gluten free brownie recipe is SO GOOD, SO EASY, and SO MUCH BETTER than an ordinary store bought gluten free brownie mix.

Using real ingredients, and just a little more time in the kitchen you’ll never go back! Nothing makes me happier to see my oldest kiddo helping the littles make this recipe. They have asked for it so many times I decided it was time for them to make it on their own! Of course, I help with the hot parts but, so much of this kids can do on their own. Cooking is a valuable skill for kids to have!

We use “natural” coco in this recipe. The other option is Dutch Process Coco powder. The big difference between the two is that Dutch Process coco powder has been treated with an alkaline solution that makes it less acidic and smoother tasting. Natural coco powder is more acidic.

Typically, you use Dutch Process baking powder in a recipe that uses baking powder and natural coco powder in a recipe that uses baking soda. This brownie recipes uses neither so you can really use natural or dutch coco . However; I prefer the darker, slightly harsher natural coco powder in this recipe because of the flavor it produces.

Our gluten free baking blend, The Muffin and More Mix

The Muffin and more mix is our versatile gluten free all purpose blend. This blend is meant to be used in a recipe and does not have any leavening, sugar, or salt mixed in. You use it just like traditional flour in a recipe.

This blend is used in a wide variety of recipes but, it really shines in batter based recipes like muffins and….. brownies! A favorite among home bakers and professional bakers it is a real powerhouse in your kitchen.

The ingredients in the Muffin and More Mix are: Potato Starch, Brown Rice Flour, Sorghum Flour, Tapioca Starch, and Xanthan Gum.

You will need only ½ of cup + 2 TBS of our Muffin and More mix in this recipe so it’s a great way to use up the last of a bag!

Ingredients

 

1/2 cup butter (room temperature)

1 cup semi-sweet chocolate chips

1/2 cup granulated white sugar

1/2 cup packed brown sugar

3 large eggs + 1 egg yolk

1 tsp vanilla extract

1/2 cup + 2 tbsp Josie’s Best Gluten Free Muffin and More mix

3 tbsp cocoa powder

1/4 tsp salt

1/2 cup chocolate chips (optional)

Instructions

Position the oven rack to the lower third of the oven and preheat the oven to 350 degrees F.

Line a 9×9 baking dish with parchment paper and set aside. Tip: crinkle you parchment paper into a ball before spreading it into your pan and it will be much easier to work with!

Put a medium sized pot on low heat. Add the butter and watch it closely as it starts melting. Add the chocolate chips and stir continuously for about 30 seconds. Turn the heat off and continue to stir until all the chocolate has melted.

Set the melted chocolate mixture aside to cool a bit.

In a medium sized bowl add the brown and white sugar and mix well.

Add eggs, egg yolk, vanilla, and mix until well incorporated. The extra egg yolk makes these brownies extra fudgey but, if you prefer it can be omitted. However; we do highly recommend!

Add your now slightly cooled melted chocolate to the egg mixture and mix well.

Whisk this mixture vigerously until it is shiny. This gives the brownies that slightly crispy topping!

In a separate bowl, combine Muffin and More mix, cocoa powder, and salt. Add the dry ingredients to the chocolate and sugar mixture and mix until just combined. Fold in the additional chocolate chips (if using).

Bake in the lower portion of the oven for about 30 to 35 minutes.

The Brownies are done when the top looks slightly crispy and a toothpick inserted into the middle comes out with only a few moist crumbs.

Allow these to cool to room temperature before slicing.
