Gluten-Free Banana Muffins
1/2 cup butter
1/2 cup granulated sugar
1 tsp vanilla extract
2 large overripe bananas, mashed
1/4 cup water
2 cups Josie’s Best Gluten Free Pancake Mix
Preheat the oven to 325 degrees F. Line a standard 12-cup muffin tin with paper liners and set aside.
In a large bowl with a mixer or in a stand mixer fitted with the paddle attachment, cream together the butter and sugar.
Add the vanilla and eggs and mix well. Add the bananas and water and mix until incorporated.
Add the Pancake Mix and mix until combined (don’t overdo it!)
Fill muffin cavities about 3/4 full. Bake for 20 to 25 minutes, until a toothpick inserted into the middle of a muffin comes out clean. Remove to a wire rack to cool completely.
