Healthy Apple Breakfast Cake
This is a riff on the berry loaf we had in our stories a few weeks ago. It uses our pancake mix as the base but here we’ve added apples and a yummy, nutritional topping. What we have not added is any additional sugars or butter. This translates well to dairy-free or vegan.
2 cup recipe Josie’s Best GF Pancake Mix + 1 additional tsp of Vanilla.
3 Apples (I used Pink Lady) cored and diced (leave the skin on for extra fiber!)
1 TBS Cinnamon
Pinch each of Cardamom, Coves, and ginger (optional but adds depth to the flavor)
½ cup coconut flakes unsweetened
¼ cup sliced almonds
1 TBS Dragon fruit powder (this is where the color comes from here- totally optional but adds nutrition as well. Could be any freeze-dried fruit powder: blueberry, strawberry, etc.)
2 TSP Agave Syrup
Preheat oven to 350
Mix pancake mix per the instructions and set aside
Toss diced apples with spices and set aside
Mix all topping ingredients together in a separate bowl and set aside
Add about ½ of the apples to the bottom of an 8X8 square baking dish or springform pan (I used 11 inch).
Put about ½ of the pancake batter on top of the apples. The rest of the apples go on top of the batter and the batter goes on top of those apples.
Sprinkle the topping evenly on top and bake for about 35-45 mins or until only a few moist crumbs stick to a toothpick when inserted in the middle.
Slice when warm (not hot). Delicious with a dollop of yogurt on top or plain!
